Roasted Garlic Goat Cheese Spread on Sourdough

So, this is the most amazing comfort food that I have ever had. All day long I have been trying to think of something fantastic to do with goat cheese, and this is what I created. It was inspired by a recipe that I had at a dinner party when I was in college (HA! I can say that now.)

What you'll need:
1 large head of garlic
6-8 oz. of goat cheese
1 Small, single serving baking dish
1 Sourdough Baguette
Aluminum Foil

First, you want to cut off the top of the entire head of garlic.

Wrap the head of garlic in a sheet of foil, leaving a hole in the top, a sort of chimney if you will, to let the garlic breathe.

Bake the garlic in an oven set to 350 degrees F. for 45 minutes.
Remove garlic when it begins to caramelize and let cool.
While the garlic is cooling, stir the goat cheese into the baking dish, and once garlic is cool enough to handle, peel the cloves and mix them in whole to the goat cheese.

When stirred, place the baking dish in the oven and baked covered for 15 minutes.
Remove dish, and serve warm with sliced baguette!

  1. This. This is like, the best thing I've eaten in a LONG time. Oh my god. I've never had goat cheese before, so I was hesitant, but this was SO. FREAKING. GOOD.
